چکیده

This study was conducted to verify if the processing and storage of brown flaxseed whole flour result in loss of functional properties, such as reduced linolenic acid content, increased lipid peroxidation and sensory changes. The flours were obtained from seeds dried by heat treatment in oven at 150 ̊C, for 15 minutes and subsequent grinding to obtain flour with a particle size of 20 mesh. Meal samples, with and without synthetic antioxidants (BHA and BHT combined, at 100 ppm each), were stored for a thirty-day period, under similar conditions to those used commercially. The linolenic acid content was quantified by gas chromatography. Lipid peroxidation was analyzed by thiobarbituric acid reactive substance assay. Color and flavor were evaluated by sensory tests. The linolenic acid content and lipid peroxidation did not significantly change after processing or during storage. Fluctuations in color and flavor occurred during storage, but at the end of 30 days, only the heat treatment presented negative effect (p < 0.05) on the parameter color. Heat treatment and thirty-day storage period do not change the stability of n-3 fatty acid in brown flaxseed whole flour.

Influence of omega-3 fatty acids from the flaxseed (Linum usitatissimum) on the brain development of newborn rats.

OBJECTIVES The importance of essential fatty acids, in particular the omega-3 family, in the central nervous system development of newborns is well documented. The flaxseed (Linum usitatissimum) is considered one of the best vegetable sources of omega-3 fatty acids. The influence of omega-3 fatty acids from flaxseed on the brain development of newborn rats was evaluated. MATERIAL AND METHODS ...

Benefits of flaxseed

As its name would suggest, flaxseed is? a seed from the flax plant! These sometimes golden or reddish brown seeds come from the flax herb (Linum usitatissimum), and are about the same size as sesame seeds. The National Institutes of Health [2] (NIH) suggests this blue flowering plant may have originated in Egypt. While small in size and mild in flavor, flaxseeds pack a nutritional punch! Many p...

Effect of Flaxseed (Linum usitatissimum) Mucilage on Physicochemical and Sensorial Properties of Semi-Fat Set Yoghurt

In the present study, the effect of addition of flaxseed mucilage on the physicochemical and sensorial properties of semi-fat (1.5% fat) set yoghurt was evaluated. Yoghurt samples were incorporated with flaxseed mucilage at the levels of 0.00, 0.10, 0.15, and 0.20% and analyzed periodically for pH value, titrable acidity, viscosity, consistency, water holding capacity, syneresis, colour paramet...

Anti-inflammatory, analgesic and antipyretic activities of Linum usitatissimum L. (flaxseed/linseed) fixed oil.

The fixed oil of L. usitatissimum (flaxseed/linseed) inhibited PGE2-, leukotriene-, histamine- and bradykinin-induced inflammation. The oil also inhibited arachidonic acid-induced inflammation, suggesting its capacity to inhibit both cyclooxygenase and lipoxygenase pathways of arachidonate metabolism. In tail immersion model, the oil raised the pain threshold to a lesser extent than morphine bu...

Effects of One Week Feeding Finisher Diets Containing Rolled and Extruded Flaxseed on Performance, Lipid Peroxidation and Omega-3 Fatty Acids in Breast and Thigh Meat of Broiler Chickens

The purpose of this experiment was to investigate the effect of one-week feeding of flaxseeds (rolled/extruded) on performance, n-3 fatty acids and oxidative stability of meat in broiler chickens. Seven pelleted diets (36-42d) were provided in a 3×2 factorial arrangement with three flaxseed levels (5, 10, and 15%) and two processing methods (rolled/extruded) and a zero flaxseed control diet. Be...
